Goodness this weather today is NOT feeling like Fall, a little more like Summer LOL! But just wait for this weekend......40's as the high oh my!!!
Well we ushered in the cooler temps today with our homemade in-house from scratch Chicken and Dumplings!!! Once a week we will be making our homemade soups! Who else loves some soup??? Soup season is the BEST! Be sure to watch for our posts each week to see what we will be offering from the kitchen :)

I LOVE to make delicious dinners that are quick, easy and hardly any clean up!
Here is one from our friends at Rada Cutlery!
Basic Beef and Potatoes Hobo Dinner Recipe
Ingredients you will need:
1 medium onion, peeled and sliced
1 lb. lean ground beef
4 medium potatoes, peeled and sliced
4 medium carrots, peeled and sliced
Salt and pepper
Garlic salt
Seasoned salt
Butter, optional
Instructions
Lay out 4 sheets of 12″ heavy duty foil.
Slice 1 medium onion into several slices.
Place onion slices on the center of foil, making a base for your hamburger patty to go.
Place 1 lb. lean ground beef in a bowl. Add small amount of water to beef so that it will effectively steam the vegetables while cooking.
Shape the ground beef into four hamburger patties.
Place the hamburger patties on top of the onions.
Peel and slice 4 medium potatoes.
Place the sliced potatoes on top of the burger and onion.
Peel and slice 4 medium carrots.
Add salt and pepper, garlic salt, and seasoned salt. Also add butter if desired.
Take the pouches and bring opposite sides of the foil together above the food and fold them over once to make a 1' crease at the top. Fold the foil over 2 more times, but leave several inches of space between the food and the top of the foil pack, like a tent. Fold or roll the ends of the pack together toward the center to make tight seals.
Bake in preheated 350 degree oven for 20 to 30 minutes. Enjoy!
Notes OVER A FIRE: Place double-wrapped foil packs on medium-hot coals for 16 to 25 minutes or until vegetables are tender and meat is fully cooked. Move packs and turn them over during cooking. ON THE GRILL: Preheat grill to medium-high heat. Place foil packs on the grill over direct heat, close the lid and cook for 18 to 25 minutes or until vegetables are tender and meat is fully cooked.
